I have tomatoes.\u00c2\u00a0 Onions.\u00c2\u00a0 Peppers.\u00c2\u00a0 Cukes.\u00c2\u00a0 Olive oil.\u00c2\u00a0 I can get parsley and garlic.\u00c2\u00a0 And I have a food processor for mixing it all up.\u00c2\u00a0 So I’m looking for recipes.<\/p>\n
My mother-in-law makes a good version following a modified Cook’s Illustrated<\/em> recipe (modified mostly to exclude garlic, which Leah can’t eat).\u00c2\u00a0 It goes a little something like this:<\/p>\n 1.5 .lb tomatoes I added the t juice after I had the other stuff blended. \n1 .lb red peppers ( I used green which R says isn’t as good)
\n1 .lb cukes
\n1\/2 sweet onion ( I used chives)
\n2 medium gloves of garlic (needless to say…)
\n2 tsps salt
\n1\/3 cup sherry or wine vinegar
\n5 cups tomato juice ( they recommend Welchs)
\n1 tsp tobasco sauce (optional)<\/p>\n
\nabout 1 tsp olive oil when serving<\/p><\/blockquote>\n
